Garlic Herb Roasted Pork Loin
Oven-roasted pork loin rubbed with aromatic garlic and fresh herbs, served alongside crisp-tender green beans and blistered tomatoes.
INGREDIENTS
7 oz Pork loin roast
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1.5 cups Green beans
0.5 cup Cherry tomatoes
PREPARATION
Preheat your oven to 400°F (200°C) and prepare a roasting pan or large rimmed baking sheet.
In a small bowl, combine the extra virgin olive oil, minced garlic, chopped rosemary, chopped thyme, sea salt, and black pepper to create a herb paste.
Pat the pork loin dry with paper towels and rub half of the herb paste evenly over all sides of the meat.
Place the trimmed green beans and cherry tomatoes in a bowl and toss them with the remaining herb paste until well coated.
Position the pork loin in the center of the roasting pan and arrange the seasoned vegetables in a single layer around the meat.
Roast in the oven for 20 to 25 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and the tomatoes have blistered.
Remove the pan from the oven and let the pork rest for 5 minutes before slicing into medallions to serve with the roasted vegetables.
