Air-fried pasta spheres made with protein-rich chickpea noodles and sharp grass-fed cheddar, delivering a satisfyingly gooey center in every bite.
INGREDIENTS
1.5 oz chickpea elbow pasta
0.5 cup nonfat plain Greek yogurt
1.25 oz sharp grass-fed cheddar cheese
1 large egg
0.25 cup whole wheat panko breadcrumbs
1 tbsp nutritional yeast
0.25 tsp garlic powder
0.25 tsp onion powder
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp avocado oil
PREPARATION
Boil the chickpea pasta in salted water until al dente, then drain and set aside.
In a medium bowl, mix the warm pasta with Greek yogurt, shredded cheddar, nutritional yeast, garlic powder, onion powder, sea salt, and black pepper until well combined.
Place the pasta mixture in the refrigerator for 30 minutes to allow it to firm up for easier handling.
Scoop the chilled mixture and roll into 4-5 uniform balls using your hands.
Whisk the egg in a small shallow bowl and place the panko breadcrumbs in a separate shallow bowl.
Dip each ball first into the egg wash, then roll in the panko breadcrumbs until fully coated.
Lightly brush or spray the balls with avocado oil and place them in the air fryer basket.
Air-fry at 375°F for 10-12 minutes, turning halfway through, until the exterior is golden brown and crispy.
