Soy-Glazed Chicken and Chickpea Bulgur
Pan-seared chicken breast glazed in a savory soy-ginger reduction, served over a hearty bed of nutty bulgur and protein-packed chickpeas.
INGREDIENTS
5 oz Chicken breast
0.25 cup Chickpeas
0.5 cup Cooked bulgur
1 tbsp Tamari
1 tsp Honey
1 tsp Extra virgin olive oil
1 clove Garlic
0.5 tsp Fresh ginger
1 stalk Green onion
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Cook the bulgur according to package instructions and set aside in a warm bowl.
Season the chicken breast evenly on both sides with the sea salt and black pepper.
Heat the olive oil in a skillet over medium-high heat and sear the chicken for 6 minutes per side until fully cooked.
While the chicken cooks, whisk together the tamari, honey, minced garlic, and grated ginger in a small bowl.
Reduce the skillet heat to medium and add the rinsed chickpeas and the tamari sauce mixture to the pan.
Simmer for 2 to 3 minutes, tossing the chicken and chickpeas frequently until the sauce becomes a thick, glossy glaze.
Slice the chicken into strips and serve over the bed of bulgur and chickpeas, drizzling any remaining glaze from the pan over the top.
Garnish with the thinly sliced green onion and serve immediately.
