Roasted Boniato, Turkey, and Egg Hash
Cubed boniato and lean ground turkey roasted until golden and crispy, topped with a perfectly set egg for a satisfying, savory meal.
INGREDIENTS
1 cup Boniato
6 oz Ground turkey
1 large Egg
1 tsp Extra virgin olive oil
0.5 cup Red bell pepper
0.25 cup Yellow onion
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Smoked paprika
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Peel and cube the boniato into half-inch pieces, then toss them on the baking sheet with olive oil, smoked paprika, garlic powder, sea salt, and black pepper.
Roast the boniato for 20 minutes, flipping halfway through, until the edges are golden and tender.
While the boniato roasts, brown the ground turkey in a large non-stick skillet over medium-high heat with the diced red bell pepper and yellow onion.
Once the turkey is fully cooked and the vegetables are soft, add the roasted boniato cubes into the skillet and stir to combine.
Use a spoon to create a small well in the center of the hash and crack the egg directly into the space.
Reduce heat to medium-low, cover the skillet with a tight-fitting lid, and cook for 3 minutes until the egg white is opaque but the yolk is still soft.
Garnish with freshly chopped parsley and serve immediately while hot.
