Pan-Seared Sirloin with Garlic Herb Butter
Pan-seared grass-fed sirloin basted in a fragrant garlic herb ghee, served alongside tender roasted asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
1 clove Garlic
0.5 tsp Fresh rosemary
0.5 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1.5 cups Asparagus spears
1 tsp Avocado oil
PREPARATION
Remove the sirloin from the refrigerator 20 minutes before cooking to reach room temperature.
Pat the steak completely dry with paper towels and season both sides with sea salt and black pepper.
Heat the avocado oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3-4 minutes per side until a deep golden crust forms.
Reduce heat to medium and add the ghee, smashed garlic clove, rosemary, and thyme to the pan.
Tilt the pan and use a spoon to continuously baste the steak with the melted herb ghee for 2 minutes.
Remove the steak to a plate and let it rest for 5 minutes to allow juices to redistribute.
In the same pan, toss the asparagus spears in the remaining herb ghee and sauté for 4-5 minutes until tender-crisp.
Slice the steak against the grain and serve with the asparagus and a drizzle of the fragrant pan juices.
