Garlic Herb Steak with Roasted Asparagus
Pan-seared grass-fed steak basted in aromatic garlic ghee, paired with crisp-tender roasted asparagus spears for a savory and satisfying meal.
INGREDIENTS
6 oz Grass-fed top sirloin steak
1 tbsp Ghee
1 bunch Asparagus
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tbsp Extra virgin olive oil
PREPARATION
Preheat your oven to 400°F (200°C).
Trim the woody ends off the asparagus and place the spears on a parchment-lined baking sheet.
Drizzle the asparagus with olive oil and season with half of the sea salt and black pepper, then roast for 12-15 minutes until tender.
While the asparagus roasts, pat the steak dry with paper towels and season both sides with the remaining salt and pepper.
Heat a cast-iron skillet over medium-high heat until very hot, then sear the steak for 4-5 minutes per side for medium-rare.
During the last minute of cooking, add the ghee, smashed garlic cloves, rosemary, and thyme to the skillet.
Tilt the pan and use a spoon to continuously baste the steak with the melted herb ghee.
Remove the steak from the pan and let it rest for 5 minutes before slicing against the grain.
Serve the sliced steak alongside the roasted asparagus.
