Oven-baked carob brownies made with creamy avocado and protein-rich egg whites, finished with a silky carob glaze for a decadent yet clean breakfast treat.
INGREDIENTS
1 cup Egg whites
0.5 cup Non-fat Greek yogurt
10 gram Collagen peptides
0.25 whole Avocado
0.25 cup Carob powder
2 tbsp Coconut flour
0.5 tbsp Maple syrup
0.5 tsp Baking powder
0.25 tsp Sea salt
1 tsp Vanilla extract
1 tsp Coconut oil
1 tbsp Carob powder
PREPARATION
Preheat your oven to 350°F and line a small square baking dish with parchment paper.
In a high-speed blender, combine the egg whites, Greek yogurt, avocado, maple syrup, and vanilla extract until the mixture is completely smooth.
Transfer the wet mixture to a medium bowl and whisk in the collagen peptides, 0.25 cup carob powder, coconut flour, baking powder, and sea salt until no lumps remain.
Pour the batter into the prepared baking dish and smooth the top with a spatula.
Bake for 22-25 minutes, or until the center is set and a toothpick comes out mostly clean.
While the brownies cool completely, whisk together the melted coconut oil and the remaining 1 tablespoon of carob powder in a small bowl to create the glaze.
Drizzle the silky carob glaze over the brownies and slice into portions once the glaze has set.
