Protein-Packed French Onion Soup
Sliced lean beef and caramelized onions simmered in a rich bone broth, topped with a toasted sourdough slice and bubbly, melted Gruyère cheese.
INGREDIENTS
1 large Yellow onion
1 tsp Olive oil
4 oz Lean top sirloin steak
1.5 cups Beef bone broth
0.25 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 slice Sourdough bread
0.75 oz Gruyère cheese
1 tsp Balsamic vinegar
PREPARATION
Thinly slice the yellow onion and the top sirloin steak into very thin strips.
Heat the olive oil in a heavy-bottomed pot over medium heat and add the onions, cooking for 15-20 minutes until they are deeply caramelized and golden brown.
Increase the heat to medium-high and add the steak strips, searing them until browned on all sides.
Stir in the balsamic vinegar to deglaze the pan, scraping up any browned bits from the bottom.
Add the beef bone broth, dried thyme, sea salt, and black pepper, then bring the mixture to a gentle simmer for 10 minutes.
Ladle the soup into an oven-safe crock or ramekin.
Place the sourdough bread slice on top of the soup and cover with the shredded Gruyère cheese.
Place under a broiler for 2-3 minutes until the cheese is melted, golden, and bubbly.
