Seared Salmon with Roasted Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with roasted asparagus and creamy garlic-infused cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
100g Asparagus spears
1 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Preheat your oven to 400°F (200°C).
Trim the woody ends off the asparagus and toss them with half of the olive oil, salt, and pepper on a baking sheet.
Roast the asparagus for 12-15 minutes until tender and slightly charred.
While asparagus roasts, steam the cauliflower florets until they are very soft, about 10-12 minutes.
Transfer the steamed cauliflower to a food processor or blender with the garlic, Greek yogurt, and a pinch of salt; process until smooth and creamy.
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on the skin side until crispy, then flip and cook for another 2-3 minutes until the desired doneness is reached.
Serve the seared salmon over a bed of garlic cauliflower mash with the roasted asparagus on the side.
