Preheat your oven to 400°F (200°C).
Scrub the potato thoroughly, pierce it several times with a fork, and rub the skin with olive oil.
Place the potato directly on the oven rack and bake for 45 to 60 minutes until the skin is crisp and the center is tender.
While the potato is baking, heat a non-stick skillet over medium heat and add the ground turkey.
Cook the turkey, breaking it into small crumbles, until it is no longer pink.
Season the turkey with sea salt, black pepper, garlic powder, and onion powder, then remove from heat.
Once the potato is done, slice it down the center and fluff the interior with a fork.
Stuff the seasoned turkey into the potato and top with the shredded sharp cheddar cheese.
Place the potato back in the oven for 2 to 3 minutes until the cheese is melted and bubbly.
Remove from the oven and top with a generous dollop of Greek yogurt and a sprinkle of freshly snipped chives.
