Herb-Roasted Rotisserie Chicken
Succulent rotisserie chicken reheated with fragrant rosemary and thyme, served alongside a colorful medley of tender roasted carrots and crisp asparagus.
INGREDIENTS
4.5 oz Rotisserie chicken
1 cup Carrots
1 cup Asparagus
0.25 tbsp Extra virgin olive oil
1 tsp Dried rosemary
1 tsp Dried thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 clove Garlic
1 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Peel and slice the carrots into thin rounds and trim the woody ends off the asparagus.
On the prepared baking sheet, toss the carrots and asparagus with the extra virgin olive oil, minced garlic, sea salt, and black pepper.
Spread the vegetables in a single layer and roast for 15 to 18 minutes until the carrots are tender and the asparagus is lightly charred.
While the vegetables roast, shred or slice the rotisserie chicken into bite-sized pieces, removing the skin if you prefer a leaner meal.
In a small skillet over medium heat, combine the chicken, dried rosemary, dried thyme, and lemon juice, tossing gently for 3 to 5 minutes until heated through.
Plate the herb-infused chicken alongside the roasted vegetables and serve immediately while hot.
