Chicken Fried Rice Skillet
Sautéed chicken and chilled brown rice tossed with crisp vegetables and savory tamari for a satisfying skillet meal with a hint of toasted sesame aroma.
INGREDIENTS
4 oz Chicken breast
1 large Egg
0.5 cup Cooked brown rice
0.25 cup Carrots
0.25 cup Frozen peas
1 tsp Avocado oil
1 tsp Toasted sesame oil
1 tbsp Tamari
1 clove Garlic
1 tsp Fresh ginger
2 stalks Green onions
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat avocado oil in a large skillet over medium-high heat.
Season diced chicken with sea salt and black pepper, then add to the skillet and cook until golden brown and cooked through.
Add the diced carrots, minced garlic, and grated ginger to the pan, sautéing for 3 minutes until the carrots begin to soften.
Push the chicken and vegetables to one side of the skillet and crack the egg into the empty space, scrambling it until just set.
Stir in the chilled cooked brown rice and frozen peas, breaking up any clumps of rice with a spatula.
Pour the tamari and toasted sesame oil over the mixture, tossing everything together for 2-3 minutes until the rice is heated through and slightly crispy.
Remove from heat and garnish with sliced green onions before serving.
