Grilled Salmon with Plantain and Fruit
Succulent salmon fillet grilled with smoky Nigerian-inspired spices, served alongside caramelized ripe plantains and a refreshing burst of sweet diced mango.
INGREDIENTS
6.5 oz Salmon fillet
0.33 cup Ripe plantain
0.33 cup Fresh mango
0.5 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Smoked paprika
0.25 tsp Garlic powder
1 tsp Fresh lime juice
PREPARATION
Preheat a grill or grill pan to medium-high heat.
Pat the salmon fillet dry with a paper towel and rub with olive oil, sea salt, black pepper, smoked paprika, and garlic powder.
Lightly coat the sliced ripe plantains with a tiny amount of oil or cooking spray to prevent sticking.
Place the salmon on the grill skin-side down and cook for approximately 4-5 minutes.
Add the plantain slices to the grill at the same time as the fish, cooking for 2-3 minutes per side until they are golden and caramelized.
Flip the salmon carefully and cook for an additional 2-3 minutes until the fish is opaque and flakes easily with a fork.
Remove the salmon and plantains from the heat, drizzle the fish with fresh lime juice, and serve immediately with the diced fresh mango on the side.
