Garlic Herb Steak with Roasted Potatoes and Green Beans
Pan-seared grass-fed steak basted with aromatic garlic and fresh rosemary, served alongside crispy roasted potatoes and vibrant, tender-crisp green beans.
INGREDIENTS
6 oz grass-fed sirloin steak
5 oz red potatoes
1.5 cups green beans
0.25 tbsp extra virgin olive oil
0.5 tsp ghee
2 cloves garlic
1 sprig fresh rosemary
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Wash and dice the red potatoes into 1/2-inch cubes, then toss them on the baking sheet with olive oil and half of the salt and pepper.
Roast the potatoes for 20 minutes, then move them to one side of the tray and add the trimmed green beans to the other side, roasting for another 12 minutes.
While the vegetables roast, season the steak on both sides with the remaining salt and pepper.
Heat a cast-iron skillet over medium-high heat and add the ghee. Once hot, sear the steak for 3-4 minutes per side.
During the last 2 minutes of cooking, add the smashed garlic cloves and rosemary sprig to the pan, spooning the infused ghee over the steak.
Remove the steak from the pan and let it rest for 5 minutes before slicing against the grain.
Serve the sliced steak alongside the roasted potatoes and green beans.
