Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Slice the sweet potato into thin, even wedges and toss them in a bowl with half of the olive oil and a pinch of sea salt.
Spread the sweet potato wedges in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway through until edges are crispy.
While the potatoes roast, combine the ground turkey, egg, garlic powder, onion powder, and the remaining salt and pepper in a mixing bowl.
Gently mix the turkey and spices by hand until just combined, then form into one thick, uniform patty.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the patty in the skillet and sear for 5-6 minutes per side, or until the internal temperature reaches 165°F and the exterior is nicely browned.
Arrange the fresh baby spinach and tomato slices on a plate to serve as a base.
Place the hot turkey burger on top of the greens and serve immediately with the roasted sweet potato fries.
