Herb-Crusted Cod with Roasted Brussels Sprouts and Sweet Potato Mash
Flaky cod fillets baked with a fresh parsley and lemon zest crust, served with charred brussels sprouts and creamy mashed sweet potatoes.
INGREDIENTS
7 oz Atlantic Cod
1 cup Brussels Sprouts
120g Sweet Potato
0.5 tsp Olive Oil
2 tbsp Unsweetened Almond Milk
1 tbsp Fresh Parsley
1 tsp Lemon Zest
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Halve the brussels sprouts and toss them with olive oil and a pinch of salt on the baking sheet.
Roast the sprouts for 10 minutes while you prepare the other components.
Peel and cube the sweet potato, then boil or steam until tender and mash with the almond milk until smooth.
Season the cod fillets with lemon zest, chopped parsley, and black pepper.
Move the sprouts to one side of the pan and place the cod fillets on the other side.
Bake everything for another 10 to 12 minutes until the fish is opaque and the sprouts are charred.
Plate the cod over the sweet potato mash and serve with the roasted sprouts on the side.
