Tofu Edamame Stir-Fry with Garlic Sauce
Crispy pan-seared tofu and vibrant edamame tossed in a savory garlic-ginger sauce with a satisfying crunch from fresh bok choy and peppers.
INGREDIENTS
10 oz Firm Tofu
0.75 cup Shelled Edamame
1 tsp Toasted Sesame Oil
2 cloves Garlic
1 tsp Fresh Ginger
1 cup Bok Choy
0.5 cup Red Bell Pepper
1 tbsp Tamari
1 tsp Rice Vinegar
0.25 tsp Red Pepper Flakes
1 tsp Sesame Seeds
PREPARATION
Press the tofu for 15 minutes to remove excess moisture then cut into 1-inch cubes.
In a small bowl whisk together the tamari rice vinegar and red pepper flakes to create the base sauce.
Heat the toasted sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and sear until golden brown and crispy on all sides.
Toss in the minced garlic and grated ginger sautéing for 30 seconds until fragrant.
Add the shelled edamame chopped bok choy and sliced red bell pepper to the pan.
Stir-fry the vegetables for 3 to 4 minutes until the bok choy is wilted but the stems remain crisp.
Pour the sauce over the mixture and toss well to coat everything evenly.
Garnish with sesame seeds before serving hot.
