Slow Cooker Herb Chicken and Vegetables
Tender chicken breasts slow-cooked with earthy root vegetables and fresh herbs for a comforting, melt-in-your-mouth texture.
INGREDIENTS
4 oz chicken breast
1 cup carrots
1 cup green beans
4 oz baby potatoes
0.5 cup chicken broth
0.5 tbsp extra virgin olive oil
1 tsp dried rosemary
1 tsp dried thyme
0.5 tsp garlic powder
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Place the halved baby potatoes, chopped carrots, and trimmed green beans in the bottom of the slow cooker.
Lay the chicken breast on top of the vegetable layer.
In a small bowl, whisk together the extra virgin olive oil, dried rosemary, dried thyme, garlic powder, sea salt, and black pepper.
Drizzle the herb mixture evenly over the chicken, then pour the chicken broth into the bottom of the pot.
Cover and cook on low for 6 hours or on high for 3 hours until the chicken is tender and succulent.
Slice the chicken and serve warm with the herb-infused juices from the pot drizzled over the vegetables.
