Seared Steak with Herb Potatoes and Sauteed Corn
Pan-seared top sirloin paired with herb-roasted red potatoes and sweet sautéed corn, finished with a touch of golden ghee.
INGREDIENTS
7.5 oz Top Sirloin Steak
200g Red Potatoes
1/2 cup Sweet Corn
1 tbsp Ghee
1 tsp Olive Oil
1 clove Garlic
1 tsp Fresh Rosemary
PREPARATION
Preheat oven to 400°F.
Toss diced red potatoes with olive oil, salt, pepper, and chopped rosemary.
Spread potatoes on a baking sheet and roast for 20-25 minutes until tender and browned.
Season the steak generously with salt and pepper on both sides.
Heat a cast-iron skillet over medium-high heat with half of the ghee.
Sear the steak for 4-5 minutes per side for medium-rare, adding smashed garlic to the pan.
Remove steak from the skillet and let it rest for at least 5 minutes.
In the same skillet, add the remaining ghee and the corn kernels.
Sauté the corn for 3-4 minutes until slightly charred and tender.
Slice the steak against the grain and serve with the potatoes and corn.
