Garlic Herb Steak with Roasted Asparagus and Potatoes
Sizzling pan-seared sirloin basted in garlic and herbs, paired with golden roasted potatoes and snap-tender asparagus for a hearty, clean-eating dinner.
INGREDIENTS
5.5 oz Top sirloin steak
3 oz White potato
1 cup Asparagus spears
0.5 tbsp Ghee
1 clove Garlic
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Dice the white potato into small cubes and toss with half of the ghee, sea salt, and black pepper.
Spread the potatoes on the baking sheet and roast for 15 minutes.
Trim the woody ends of the asparagus and add them to the baking sheet with the potatoes, roasting for another 10 minutes until tender.
Season the sirloin steak with rosemary and thyme.
Heat the remaining ghee in a cast-iron skillet over medium-high heat and sear the steak for 4-5 minutes per side.
Add the smashed garlic clove to the pan during the last 2 minutes of cooking, spooning the herb-infused ghee over the steak.
Remove the steak from the pan and let it rest for 5 minutes before slicing and serving with the roasted vegetables.
