Honey-Garlic Salmon Power Bowl
Pan-seared wild salmon and shrimp glazed in a sticky honey-garlic sauce, served over a bed of fluffy egg whites and wilted spinach for a protein-packed lunch.
INGREDIENTS
1 oz Wild sockeye salmon
7.5 oz Large shrimp
1 cup Liquid egg whites
0.25 tsp Honey
1 tbsp Tamari
1 tsp Garlic
0.5 tsp Fresh ginger
1 tsp Lemon juice
1 cup Fresh baby spinach
0.25 tsp Red pepper flakes
0 tsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
In a small bowl, whisk together the honey, tamari, minced garlic, grated ginger, and lemon juice to create the glaze.
Season the cubed salmon and peeled shrimp with sea salt and black pepper.
Heat the avocado oil in a large non-stick skillet over medium-high heat.
Add the salmon and shrimp to the skillet, searing for 2-3 minutes per side until the shrimp is pink and the salmon is cooked through.
Remove the seafood from the pan and set aside; pour the liquid egg whites into the same skillet.
Scramble the egg whites until they are just set and fluffy, then stir in the fresh baby spinach and red pepper flakes until the greens are wilted.
Return the salmon and shrimp to the skillet and pour the honey-garlic glaze over the top, tossing for 1 minute to coat everything thoroughly.
Transfer the high-protein mixture to a bowl and enjoy immediately while warm.
