Lemon Herb Chicken with Roasted Broccoli
Pan-seared chicken breast finished in the oven with charred broccoli florets, infused with zesty lemon and aromatic herbs for a bright, savory finish.
INGREDIENTS
5.5 oz Chicken breast
1.5 cups Broccoli florets
1 tbsp Extra virgin olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Dried oregano
1 tsp Garlic powder
1 tbsp Lemon juice
1 tsp Lemon zest
1 tbsp Grated parmesan cheese
PREPARATION
Preheat your oven to 400°F (200°C) and prepare a large oven-safe skillet.
Pat the chicken breast dry with paper towels and season both sides evenly with half of the sea salt, black pepper, dried oregano, and garlic powder.
In a medium bowl, toss the broccoli florets with half of the olive oil and the remaining salt, pepper, oregano, and garlic powder until well coated.
Place the skillet over medium-high heat and add the remaining olive oil.
Once the oil is shimmering, sear the chicken breast for 3-4 minutes until a golden-brown crust forms, then flip.
Arrange the seasoned broccoli florets in the skillet around the chicken breast.
Transfer the skillet to the preheated oven and roast for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F and the broccoli is tender with charred edges.
Remove from the oven and immediately drizzle the chicken and broccoli with fresh lemon juice.
Garnish with the lemon zest and a sprinkle of grated parmesan cheese before serving warm.
