Spinach & Ricotta Stuffed Shells
Baked jumbo pasta shells stuffed with a savory turkey and spinach-ricotta filling, nestled in a vibrant marinara sauce until bubbling and golden.
INGREDIENTS
3 whole jumbo pasta shells
5 oz 93% lean ground turkey
0.25 cup part-skim ricotta cheese
1 cup fresh baby spinach
0.5 cup no sugar added marinara sauce
1 tbsp grated parmesan cheese
1 large egg white
0.25 tsp garlic powder
0.25 tsp dried oregano
0.13 tsp sea salt
0.13 tsp black pepper
PREPARATION
Preheat oven to 375°F and lightly grease a small baking dish.
Cook jumbo pasta shells in boiling salted water for 8-9 minutes until al dente, then drain and set aside.
In a medium skillet over medium-high heat, cook the ground turkey until browned and crumbled through.
Add the fresh baby spinach to the turkey and sauté for 1-2 minutes until completely wilted.
In a mixing bowl, combine the cooked turkey and spinach with ricotta cheese, egg white, garlic powder, oregano, sea salt, and black pepper.
Spread 0.25 cup of the marinara sauce across the bottom of the prepared baking dish.
Stuff each cooked shell generously with the turkey and cheese mixture and arrange them snugly in the dish.
Spoon the remaining marinara sauce over the shells and sprinkle evenly with the grated parmesan cheese.
Bake for 20 minutes until the sauce is bubbling and the shells are heated through.
