Garlic Butter Shrimp Scampi
Succulent shrimp sautéed in a silky garlic-butter sauce with a bright squeeze of lemon, served over a bed of tender riced cauliflower.
INGREDIENTS
8 oz Large shrimp
1.5 cups Cauliflower rice
1 tbsp Ghee
1 tsp Extra virgin olive oil
3 cloves Garlic
2 tbsp Chicken bone broth
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Red pepper flakes
1 tbsp Fresh parsley
PREPARATION
Pat the shrimp dry with paper towels and season evenly with sea salt and black pepper.
Heat a large skillet over medium heat with the extra virgin olive oil and sauté the cauliflower rice for 4-5 minutes until tender, then remove from the pan and set aside.
In the same skillet, melt the ghee over medium-low heat.
Add the minced garlic and red pepper flakes to the ghee, sautéing for about 1 minute until the aroma is fragrant and the garlic is just beginning to turn golden.
Increase the heat to medium and add the shrimp in a single layer, cooking for 2 minutes per side until they are pink and opaque.
Pour in the chicken bone broth and lemon juice, simmering for 1 minute while stirring to create a light, glossy sauce that coats the shrimp.
Stir in the fresh parsley and serve the shrimp and garlic sauce immediately over the warm cauliflower rice.
