Pan-Seared Steak with Garlic Mashed Potatoes
Tender sirloin steak pan-seared to a succulent finish, served with creamy garlic-infused mashed potatoes and crisp steamed green beans.
INGREDIENTS
6 oz Sirloin steak
1 medium Yukon Gold potato
1 cup Green beans
2 cloves Garlic
1 tsp Ghee
1 tbsp Plain Greek yogurt
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh parsley
PREPARATION
Peel and chop the potato into 1-inch chunks, then boil in salted water for 12-15 minutes until fork-tender.
While the potatoes boil, season the steak evenly with half of the sea salt and black pepper on both sides.
Heat 1 tsp of ghee in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, then transfer to a plate to rest for 5 minutes.
Steam the green beans in a small amount of water for 4-5 minutes until they are bright green and crisp-tender.
Drain the potatoes and return them to the pot, adding the remaining 1 tsp of ghee, minced garlic, Greek yogurt, and the rest of the salt and pepper.
Mash the potatoes until smooth and creamy, then stir in the finely chopped fresh parsley.
Slice the steak against the grain and serve immediately alongside the garlic mash and steamed green beans.
