Garlic Plantain Mofongo with Avocado
Pan-seared chicken breast served over a savory mash of garlic-infused green plantains and topped with creamy avocado slices.
INGREDIENTS
5 oz Chicken breast
0.5 medium Green plantain
0.5 tbsp Olive oil
2 cloves Garlic
0.25 whole Avocado
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 cup Chicken bone broth
1 tsp Fresh cilantro
PREPARATION
Season the chicken breast with half of the sea salt and black pepper.
Heat a skillet over medium-high heat with half of the olive oil and sear the chicken for 6-7 minutes per side until cooked through, then set aside to rest.
Peel the green plantain and cut it into 1-inch thick rounds.
Boil the plantain rounds in a pot of water for 10-12 minutes until tender, then drain thoroughly.
In a mortar and pestle or a sturdy bowl, mash the boiled plantains with minced garlic, the remaining olive oil, remaining salt, pepper, and chicken bone broth until a thick, textured consistency is reached.
Form the mashed plantain into a dome shape in the center of a plate.
Slice the rested chicken breast and arrange it over the mofongo.
Top with fresh avocado slices and a garnish of chopped cilantro before serving.
