Peel and dice the sweet potato into small 1/2-inch cubes to ensure even cooking.
Heat the olive oil in a medium cast-iron or non-stick skillet over medium-high heat.
Add the sweet potato cubes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and brown.
Add the diced yellow onion and red bell pepper to the skillet, sautéing for another 3 minutes until the onions are translucent.
Push the vegetables to the side of the pan and add the ground turkey. Break it up with a spatula and cook until browned and no longer pink.
Stir in the sea salt, black pepper, smoked paprika, and garlic powder to evenly coat the turkey and vegetables.
Add the chopped kale to the skillet and toss for 1-2 minutes until it is slightly wilted.
Use a spoon to create three small wells in the mixture. Crack the whole egg into one well and pour the egg whites into the other two.
Reduce the heat to medium-low, cover the skillet with a lid, and cook for 3-4 minutes until the egg whites are set but the yolk remains runny.
Remove from heat and serve immediately directly from the skillet.
