Crispy Pork and Vegetable Spring Rolls
Lean ground pork and crisp vegetables sautéed with ginger and garlic, then air-fried in delicate wrappers until they reach a satisfying golden crunch.
INGREDIENTS
5 oz Ground pork (93% lean)
2 large Spring roll wrappers
1 cup Shredded green cabbage
0.5 cup Shredded carrots
2 tbsp Coconut aminos
1 tsp Grated fresh ginger
1 clove Garlic
0.25 tsp Toasted sesame oil
0.25 tbsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Brown the ground pork in a large skillet over medium-high heat until fully cooked.
Add the shredded cabbage, carrots, ginger, and garlic to the pork, sautéing for 3 minutes until the vegetables soften.
Stir in the coconut aminos, toasted sesame oil, sea salt, and black pepper, then let the mixture cool for 5 minutes.
Lay a spring roll wrapper flat and place 1/4 of the pork filling near the bottom corner.
Fold the bottom corner over the filling, tuck in the side corners, and roll tightly, sealing the tip with a drop of water.
Brush the outside of each roll lightly with avocado oil to ensure a crisp finish.
Air fry at 400°F for 10-12 minutes, flipping once, until the wrappers are bubbly and browned.
