Pan-Seared Steak with Jammy Eggs
Cast-iron seared grass-fed sirloin paired with velvety jammy eggs and crisp roasted asparagus for a protein-packed start to your day.
INGREDIENTS
4 oz Grass-fed sirloin steak
2 large Eggs
0.5 tsp Ghee
1 cup Asparagus
0.5 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
PREPARATION
Bring a small pot of water to a boil and carefully lower the eggs into the water.
Simmer the eggs for exactly 6.5 minutes, then immediately transfer them to an ice bath to stop the cooking.
Season the sirloin steak on both sides with sea salt, black pepper, and garlic powder.
Heat the ghee in a cast-iron skillet over medium-high heat until shimmering.
Place the steak in the skillet and sear for 3 to 4 minutes per side for medium-rare, then remove to a plate to rest for 5 minutes.
In the same skillet, add the olive oil and asparagus spears, sautéing for 4 minutes until tender-crisp and lightly charred.
Peel the eggs and slice them in half to reveal the jammy centers.
Plate the sliced steak with the asparagus and jammy eggs, finishing with an extra pinch of sea salt if desired.
