Pan-Seared Steak with Garlic Herb Butter
Pan-seared top sirloin basted in a fragrant garlic and rosemary-infused grass-fed butter, served with crisp-tender roasted asparagus.
INGREDIENTS
5.25 oz Top sirloin steak
0.25 tbsp Grass-fed butter
1 clove Garlic
1 sprig Fresh rosemary
1 cup Asparagus
0.25 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
1. Pat the steak dry and season both sides with half of the sea salt and black pepper.
2. Toss asparagus with olive oil and the remaining salt and pepper, then roast at 400°F for 10 minutes until tender.
3. Heat a heavy cast-iron skillet over medium-high heat until very hot.
4. Place the steak in the dry pan and sear for 3 to 4 minutes per side for a perfect medium-rare.
5. Reduce heat to low and add the grass-fed butter, smashed garlic clove, and rosemary sprig to the pan.
6. Tilt the pan slightly and spoon the melting herb butter over the steak repeatedly for 1 minute to infuse flavor.
7. Remove the steak from the pan and let it rest on a cutting board for 5 minutes before slicing against the grain.
8. Plate the sliced steak alongside the roasted asparagus and drizzle any remaining pan butter over the top.
