Pan-Seared Spam with Garlic Rice
Pan-seared low-sodium Spam served over aromatic garlic rice with crisp bok choy and protein-rich eggs for a savory, balanced meal.
INGREDIENTS
2 oz Spam 25% less sodium
0.5 cup cooked jasmine rice
1 large egg
0.75 cup liquid egg whites
0.5 tsp toasted sesame oil
2 whole garlic cloves
1 cup baby bok choy
1 tbsp low-sodium tamari
1 stalk green onion
0.25 tsp black pepper
PREPARATION
Slice the Spam into thin strips or small cubes.
Heat a large non-stick skillet over medium-high heat. Add the Spam and sear until golden brown and crispy on all sides, then remove from the pan and set aside.
Lower the heat to medium and add the toasted sesame oil and minced garlic cloves to the same skillet. Sauté for 30 seconds until fragrant.
Add the chopped baby bok choy to the skillet and sauté for 2 minutes until the leaves are wilted and the stems are slightly tender.
Push the vegetables to one side of the pan. Pour in the large egg and liquid egg whites, scrambling them until just set.
Add the cooked jasmine rice, seared Spam, low-sodium tamari, and black pepper to the skillet.
Toss all ingredients together for 1-2 minutes until the rice is heated through and well-combined.
Garnish with sliced green onion and serve immediately.
