Spicy Gochujang Chicken Stir-Fry
Sautéed chicken breast and crisp vegetables tossed in a fiery gochujang glaze, served over nutty brown rice for a bold and satisfying meal.
INGREDIENTS
5 oz chicken breast
1 tbsp gochujang paste
1 tbsp tamari
1 tsp fresh ginger
1 clove garlic
0.5 tsp sesame oil
1 tsp raw honey
1 cup broccoli florets
0.5 cup red bell pepper
0.25 cup cooked brown rice
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
In a small bowl, whisk together the gochujang paste, tamari, minced ginger, minced garlic, raw honey, and sesame oil to create the spicy glaze.
Cut the chicken breast into bite-sized cubes and season evenly with sea salt and black pepper.
Heat a large non-stick skillet or wok over medium-high heat and lightly coat with oil spray if needed.
Add the chicken to the skillet and sear for 5-6 minutes until golden brown and cooked through, then remove from the pan and set aside.
In the same skillet, add the broccoli florets and sliced red bell peppers with a splash of water, sautéing for 3-4 minutes until tender-crisp.
Return the chicken to the pan and pour the gochujang sauce over the mixture, tossing constantly for 1 minute until the sauce thickens and coats everything beautifully.
Serve the stir-fry immediately over the warm cooked brown rice.
