Garlic Herb Steak with Roasted Vegetables
Pan-seared sirloin steak basted in fragrant garlic ghee, served with a vibrant medley of oven-roasted broccoli and bell peppers.
INGREDIENTS
5.5 oz Top sirloin steak
1 cup Broccoli florets
1 cup Red bell pepper
0.5 tbsp Extra virgin olive oil
0.5 tbsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
0.5 tsp Sea salt
0.5 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Toss the broccoli florets and sliced red bell peppers with the olive oil and half of the sea salt and black pepper.
Spread the vegetables in a single layer and roast for 15-20 minutes until tender and slightly charred at the edges.
Pat the sirloin steak dry with paper towels and season both sides with the remaining sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until very hot, then add the steak to the dry pan.
Sear the steak for 3-4 minutes per side for medium-rare, or until it reaches your desired level of doneness.
Reduce heat to medium and add the ghee, smashed garlic cloves, and fresh rosemary to the skillet, spooning the melted herb ghee over the steak for 1 minute.
Transfer the steak to a cutting board to rest for 5 minutes before slicing and serving alongside the roasted vegetables.
