Herb-Roasted Turkey Breast with Pan Gravy
Tender turkey breast roasted with aromatic fresh herbs and served with a silky pan gravy alongside crisp-tender green beans and golden potatoes.
INGREDIENTS
6 oz Turkey breast
1 tbsp Olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 cup Chicken bone broth
1 tsp Arrowroot powder
1 cup Green beans
0.5 cup Baby potatoes
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Halve the baby potatoes and trim the green beans; toss the potatoes with half of the olive oil and a pinch of salt and pepper.
Place the turkey breast on the sheet pan and rub with the remaining olive oil, chopped rosemary, thyme, salt, and pepper.
Arrange the potatoes around the turkey and roast in the oven for 15 minutes.
Add the green beans to the sheet pan, tossing them in the pan juices, and continue roasting for another 10 to 15 minutes or until the turkey reaches an internal temperature of 165°F.
While the turkey rests, whisk the chicken bone broth and arrowroot powder in a small saucepan over medium heat until it simmers and thickens into a silky gravy.
Slice the turkey breast and serve immediately with the roasted vegetables and a drizzle of the herb-infused pan gravy.
