Garlic Shrimp and Quinoa Bowl
Tender shrimp sautéed with pungent garlic and red pepper flakes, served over a bed of fluffy quinoa and vibrant steamed broccoli.
INGREDIENTS
7 oz shrimp
0.25 cup quinoa
1 cup broccoli florets
2 clove garlic
0.5 tbsp olive oil
1 tbsp lemon juice
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp red pepper flakes
1 tbsp fresh parsley
PREPARATION
Rinse the quinoa under cold water and place in a small pot with 0.5 cups of water; bring to a boil, then cover and simmer for 15 minutes until fluffy.
While quinoa cooks, place broccoli florets in a steamer basket over boiling water and steam for 4-5 minutes until tender-crisp and bright green.
Pat the shrimp dry with paper towels and season with half of the sea salt and black pepper.
Heat olive oil in a large skillet over medium-high heat; add the shrimp in a single layer and sear for 2 minutes per side until pink and opaque.
Add the minced garlic and red pepper flakes to the skillet, stirring constantly for 1 minute until the garlic is fragrant and golden.
Remove the skillet from heat and stir in the lemon juice and chopped fresh parsley, tossing the shrimp to coat thoroughly.
Assemble the bowl by fluffing the quinoa with a fork, topping it with the steamed broccoli and garlic shrimp, and drizzling any remaining pan juices over the top.
