Shrimp and Green Bean Potato Wraps
Sautéed shrimp and golden yellow potatoes are tossed with snap-crisp green beans and wrapped in warm tortillas for a hearty, savory meal.
INGREDIENTS
8 oz Raw shell-on shrimp
1 medium Yellow potato
1.5 cup Frozen green beans
2 medium Whole wheat tortillas
1 tbsp Olive oil
1 clove Garlic
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Smoked paprika
1 tsp Lemon juice
PREPARATION
Thaw the shrimp and green beans completely and pat them dry with a clean towel.
Peel and devein the shrimp, removing the tails if preferred for easier eating.
Scrub the yellow potato and dice it into small, uniform half-inch cubes.
Steam or microwave the potato cubes for 4 to 5 minutes until they are fork-tender but still hold their shape.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the potato cubes to the skillet and sauté for about 5 minutes until the edges are golden and crispy.
Stir in the green beans and minced garlic, cooking for 3 minutes until the beans are heated through.
Add the shrimp, sea salt, black pepper, and smoked paprika to the pan.
Sauté for 3 to 4 minutes until the shrimp are opaque and pink, then stir in the lemon juice and remove from heat.
Warm the tortillas in a separate dry pan and divide the shrimp and potato mixture evenly between them to serve.
