Lemon Herb Roasted Chicken
Tender chicken breast roasted with fragrant rosemary and zesty lemon, served alongside caramelized sweet potatoes and vibrant steamed broccoli.
INGREDIENTS
5 oz Chicken breast
1 tbsp Olive oil
1 medium Sweet potato
1 cup Broccoli florets
1 tbsp Fresh rosemary
1 tbsp Fresh thyme
1 clove Garlic
0.5 whole Lemon
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper for easy cleanup.
Peel and cube the sweet potato into 1-inch pieces, then toss them on the baking sheet with half of the olive oil and a pinch of salt.
Place the chicken breast on the same baking sheet and rub thoroughly with the remaining olive oil, minced garlic, rosemary, and thyme.
Squeeze the juice from the lemon half over the chicken and place the spent lemon rind on the tray to infuse the air with citrus.
Season everything with the sea salt and black pepper.
Roast in the center of the oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden and tender.
While the chicken rests for 5 minutes, steam the broccoli florets in a steamer basket over boiling water for 4 to 5 minutes until fork-tender.
Slice the chicken against the grain and serve immediately with the roasted sweet potatoes and steamed broccoli.
