Roasted Cod with Braised Leeks and Carrots
Oven-roasted cod fillets served over a bed of silky braised leeks, carrots, and vibrant broccoli for a clean, nutrient-dense meal.
INGREDIENTS
8 oz Cod fillet
1 cup Leeks
1 cup Carrots
1 cup Broccoli
1 tbsp Olive oil
0.25 cup Vegetable broth
1 tbsp Lemon juice
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a large skillet over medium heat, add the olive oil and sauté the sliced leeks and carrots for 5 minutes until they begin to soften.
Stir in the minced garlic and broccoli florets, then pour in the vegetable broth and cover with a lid to braise for 4 minutes.
Pat the cod fillets dry with a paper towel and season both sides with sea salt and black pepper.
Transfer the braised vegetables to the prepared baking sheet and nestle the cod fillets on top.
Drizzle the lemon juice over the fish and roast in the oven for 12-15 minutes until the cod is opaque and flakes easily with a fork.
