Avocado Sourdough Toast with Sunny Eggs
Golden toasted sourdough topped with creamy mashed avocado, savory smoked salmon, and two sunny-side-up eggs that release a rich, velvety yolk.
INGREDIENTS
1 slice Sourdough bread
0.5 whole Avocado
2 large Eggs
3.5 oz Smoked salmon
0.5 cup Cucumber
0.5 cup Cherry tomatoes
1 tsp Lemon juice
0.25 tsp Red pepper flakes
0.25 tsp Sea salt
0.25 tsp Black pepper
0 tsp Olive oil
PREPARATION
Toast the sourdough slices in a toaster or under a broiler until golden brown and crisp.
In a small bowl, scoop out the avocado flesh and mash it with the lemon juice, sea salt, and black pepper until mostly smooth.
Heat the olive oil in a non-stick skillet over medium-low heat.
Carefully crack the eggs into the skillet and cook until the whites are completely set but the yolks are still liquid, about 3 to 4 minutes.
While the eggs cook, slice the cucumber into thin rounds and halve the cherry tomatoes.
Spread the mashed avocado mixture evenly across both slices of toasted sourdough.
Drape the smoked salmon slices over the avocado base.
Gently slide one sunny-side-up egg onto each prepared toast slice.
Sprinkle the red pepper flakes over the eggs and serve immediately with the cucumber and tomatoes on the side.
