Shrimp and Great Northern Bean Stir-fry
Sautéed shrimp and creamy Great Northern beans tossed with crisp bell peppers and wilted spinach in a savory ginger-tamari glaze.
INGREDIENTS
7 oz Shrimp
0.5 cup Great Northern beans
0.5 tbsp Extra virgin olive oil
1 cup Red bell pepper
2 cup Baby spinach
1 tbsp Tamari
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Red pepper flakes
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the shrimp dry with paper towels and season with sea salt and black pepper.
Heat the olive oil in a large non-stick skillet or wok over medium-high heat.
Add the shrimp to the pan in a single layer and sear for approximately 2 minutes per side until pink and opaque.
Remove the shrimp from the pan and set aside on a plate.
In the same skillet, add the sliced red bell peppers and sauté for 3 to 4 minutes until they begin to soften.
Stir in the minced garlic, ginger, and red pepper flakes, cooking for 30 seconds until highly fragrant.
Add the rinsed Great Northern beans and tamari to the skillet, tossing well to coat the beans in the sauce.
Return the cooked shrimp to the pan and add the baby spinach.
Toss all ingredients together for 1 minute until the spinach is just wilted and the dish is heated through.
Serve immediately while the vegetables are vibrant and the shrimp is tender.
