Mahi Bowl with Avocado and Sweet-Sour Salsa
Pan-seared mahi mahi served over fluffy jasmine rice with a zesty sweet-sour salsa and silky avocado slices.
INGREDIENTS
6 oz Mahi mahi fillet
0.5 cup Cooked jasmine rice
0.25 whole Avocado
0.25 cup Sweet and sour salsa
1 tbsp Sweet and sour sauce
1 tsp Hot sauce
1 tsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the mahi mahi fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat until the oil is shimmering.
Place the mahi mahi in the skillet and sear for 3 to 4 minutes per side until the exterior is golden brown and the fish flakes easily with a fork.
While the fish is searing, warm the pre-cooked jasmine rice in a microwave-safe bowl or on the stovetop.
Slice the quarter avocado into thin, even wedges.
Place the warmed jasmine rice into the base of a serving bowl.
Top the rice with the seared mahi mahi fillet and spoon the sweet and sour salsa directly over the fish.
Arrange the avocado wedges on the side and drizzle the entire bowl with the sweet and sour sauce and hot sauce.
