Seared Lean Beef with Steamed Green Beans and Mashed Cauliflower
Cast-iron seared top round steak served with tender-crisp steamed green beans and a velvety garlic cauliflower mash.
INGREDIENTS
11.5 ounces Top Round Steak
2 cups Cauliflower florets
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Bring a large pot of water to a boil and place a steamer basket inside.
Add the cauliflower florets and minced garlic to the steamer basket, covering and steaming for 10-12 minutes until very soft.
While the cauliflower cooks, season the top round steak generously with sea salt and black pepper.
Heat the olive oil in a cast-iron skillet over medium-high heat until shimmering.
Place the steak in the hot skillet and sear for 4-5 minutes per side for medium-rare, or until it reaches your desired doneness.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
Add the green beans to the steamer basket with the cauliflower for the last 4-5 minutes of steaming until they are bright green and tender-crisp.
Transfer the steamed cauliflower and garlic to a food processor or blender and pulse until smooth and velvety, adding a splash of water or broth if needed to reach desired consistency.
Slice the rested beef against the grain and serve alongside the cauliflower mash and steamed green beans.
