Silpancho Beef with Fried Egg
Pan-seared thin beef steak breaded with whole wheat crumbs, served over fluffy rice and crispy potatoes with a vibrant tomato-onion salsa and a sunny-side-up egg.
INGREDIENTS
6 oz 93% lean ground beef
0 tbsp Whole wheat breadcrumbs
1 large Egg
0.25 cup Cooked white rice
0.5 medium Russet potato
0 tsp Extra virgin olive oil
0.5 medium Tomato
0.25 medium Red onion
1 tsp Fresh cilantro
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Ground cumin
PREPARATION
Boil the potato half in salted water until tender, then slice into rounds and lightly sear in a pan until golden and crispy.
Season the ground beef with sea salt, black pepper, and ground cumin, then divide into a ball.
Place the beef between two sheets of parchment paper sprinkled with breadcrumbs and pound it until it is a very thin, wide disc.
Heat the olive oil in a large skillet over medium-high heat and sear the beef for 2 minutes per side until the edges are browned.
In the same skillet, fry the egg until the whites are opaque and set but the yolk remains beautifully runny.
Finely dice the tomato and red onion, then toss with chopped cilantro to create a fresh salsa.
Layer the cooked rice and crispy potatoes on a plate, top with the thin beef steak and the fried egg, and finish with the salsa.
