Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served over velvety garlic cauliflower mash with broccoli florets roasted until they are perfectly crisp.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Broccoli Florets
1.5 cups Cauliflower Florets
1.5 tsp Olive Oil
1 tsp Ghee
2 Garlic Cloves
PREPARATION
Preheat your oven to 400°F.
Toss the broccoli florets with half a teaspoon of olive oil and a pinch of sea salt on a rimmed baking sheet.
Roast the broccoli for 15-20 minutes until the edges are golden and slightly charred.
Steam the cauliflower florets in a steamer basket over boiling water for about 10-12 minutes until very tender.
Transfer the steamed cauliflower to a bowl and mash with ghee and minced garlic until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Carefully flip the salmon and cook for another 2-3 minutes until it is cooked through and opaque.
Serve the salmon over the garlic cauliflower mash with the roasted broccoli on the side.
