Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper for easy cleanup.
Peel and slice the carrots into 1/2-inch thick rounds, then toss them on the baking sheet with half of the olive oil and a pinch of the sea salt and black pepper.
Roast the carrots for 20-25 minutes, tossing halfway through, until they are tender and show golden-brown edges.
While carrots roast, season the chicken breast on both sides with the remaining sea salt, black pepper, and dried thyme.
Heat the remaining olive oil in a medium skillet over medium-high heat until shimmering.
Add the chicken to the skillet and sear for 5-7 minutes per side, or until the internal temperature reaches 165°F and the exterior is golden.
In a small bowl, whisk together the honey and minced garlic until well combined.
Reduce the skillet heat to medium-low, pour the honey-garlic mixture over the chicken, and turn the breast frequently for 1-2 minutes until the sauce thickens into a glossy glaze.
Serve the glazed chicken immediately alongside the roasted carrots, drizzling any remaining glaze from the pan over the top.
