INGREDIENTS
6 oz Lean Ground Turkey
1/2 medium Red Bell Pepper
1/2 medium Yellow Bell Pepper
1/2 medium Leek
1 tsp Olive Oil
1 clove Garlic
1 tbsp Fresh Herbs (Thyme & Rosemary)
PREPARATION
Heat the olive oil in a skillet over medium heat.
Add the minced garlic to the oil and sauté for about 30 seconds until fragrant.
Add the lean ground turkey to the skillet. Cook it, breaking it apart with a spatula, until it is browned and mostly cooked through.
While the turkey cooks, slice the red and yellow bell peppers and the leek into thin strips.
Once the turkey is nearly done, add the sliced peppers and leek to the skillet. Stir well to combine with the turkey.
Sprinkle in the fresh herbs, salt, and pepper to taste. Continue to cook for an additional 3-5 minutes until the vegetables are tender but still retain some crunch.
Taste and adjust the seasoning if necessary before serving.
