PREPARATION
Dice the sweet potato into small 1/2-inch cubes. Cut the bell pepper and onion into similar-sized pieces.
Heat 1/2 teaspoon olive oil in a large cast-iron skillet over medium heat. Add the diced sweet potato and cook for 8-10 minutes, stirring occasionally.
Add the bell pepper and onion to the skillet. Season with salt and pepper, and cook for another 5-7 minutes until the vegetables are tender and starting to caramelize.
