INGREDIENTS
1/3 cup Almond Flour (approx 40g)
1 scoop Whey Protein Isolate (30g)
2 large Egg Whites (66g)
2 Tbsp Semi-Sweet Chocolate Chips (20g)
1 Tbsp Psyllium Husk (5g)
1/4 tsp Baking Soda
Pinch of Salt
1/2 tsp Vanilla Extract
PREPARATION
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the almond flour, whey protein isolate, psyllium husk, baking soda, and a pinch of salt.
In another bowl, lightly beat the egg whites with the vanilla extract until just combined.
Mix the wet ingredients into the dry mixture until a dough begins to form. Stir in the semi-sweet chocolate chips gently.
Scoop the dough onto the prepared baking sheet to form 6 evenly sized cookies, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the cookies have set and the edges are lightly golden.
Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
