INGREDIENTS
6 oz Shrimp (peeled and deveined)
1.5 cups Cauliflower Rice
2 tsp Extra Virgin Olive Oil
1/2 Avocado
2 Garlic Cloves
1 Lemon
2 Tbsp Fresh Parsley
Salt and Black Pepper to taste
PREPARATION
Pat the shrimp dry with a paper towel and season lightly with salt and black pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat. Add the shrimp and cook for about 2-3 minutes per side until they turn pink and opaque. Remove shrimp from the skillet and set aside.
In the same skillet, add the remaining teaspoon of olive oil and minced garlic. Sauté for 30 seconds until fragrant.
Add the cauliflower rice to the skillet. Sauté for 3-4 minutes until it’s tender but still has a slight crunch.
Stir in the juice of one lemon and chopped fresh parsley into the cauliflower rice, mixing well.
Return the shrimp to the skillet to warm them through for an additional minute, ensuring they are coated with the garlic-lemon mixture.
Plate the shrimp and cauliflower rice, then top with sliced avocado. Adjust seasoning with additional salt and pepper if desired. Serve warm and enjoy.
