INGREDIENTS
6 oz Chicken Breast (170g)
2 tbsp Almond Flour (14g)
1 large Egg (50g)
1 medium Orange (131g)
1 tbsp Low-Sodium Soy Sauce (16g)
1 tsp Honey (7g)
1 tsp Fresh Ginger
1 clove Garlic
PREPARATION
Preheat your air fryer to 400°F.
Cut the chicken breast into bite-sized pieces ensuring uniform thickness for even cooking.
In a shallow bowl, whisk the egg. In another small bowl, combine the almond flour with a pinch of salt and freshly ground pepper.
Dip each chicken piece first into the egg, then coat well with the almond flour mixture.
Place the coated chicken pieces evenly in the air fryer basket in a single layer, making sure they aren’t overlapping.
Air-fry the chicken for about 10-12 minutes or until crispy and cooked through, shaking the basket halfway through for even crisping.
Meanwhile, zest the orange and then squeeze out the juice from the orange into a small saucepan.
Add minced garlic, grated ginger, soy sauce, honey, and a bit of the orange zest to the saucepan. Simmer over low heat for about 3-4 minutes until slightly thickened to form the orange sauce.
Once the chicken is done, transfer it to a bowl and drizzle the warm orange sauce over it.
Serve immediately, garnished with additional orange zest if desired.
